Rajshri Food is here with a series on Vegan Food. The practice of abstaining from the use of animal products, particularly in the diet is known as Vegan. Our today's recipe is Vegan Fruit Cream Recipe by Chef Nupur Sampat.

Ingredients for Coconut Milk:
1 Coconut ( soaked in water )
Water

Ingredients for the cream base:
Coconut Milk
1 Banana
1 tsp each - Dates & Raisins (soaked)
1/2 tsp - sugar
1/4 tsp - Vanilla Extract

Ingredients for Fruit Cream:
Cream Base
Mangoes (Chopped)
Lychees (Chopped)
Green Grapes
Black Grapes (Chopped)
Pomegranate

Method of preparation:
In a mixer jar add coconut, water and blend it well.
Strain the batter, you'll get thick milk.
Churn it once again by adding little water.
Again strain the batter and our coconut milk is ready.
Refrigerate it overnight.

Method of preparation for the cream base:
Skin the creamy part of the coconut milk and put it in the mixer.
Add banana, dates, raisins, sugar vanilla extract.
Give it a nice blend.
Transfer the cream base into a bowl.

Method of preparation for Fruit Cream:
In a bowl add cream base, mangoes, lychees, green grapes, black grapes, pomegranate.
Give it a good mix and our Fruit Cream is ready.
